Snicker Cookie Bars

Bring the gift of homemade with these delicious Snicker Cookie Bars

This sweet treat has been a favorite this holiday season and a great way to use up the Halloween leftovers.  I bought way too many full size Snickers bar this Halloween and my husband, Kurt, and I will never eat them. So I had to figure out a way to use them up and I remember doing a television segment about making brownies from Halloween candy and this recipe came to mind. It’s been a fan favorite at work, at parties, and with the neighbors so I thought I would share it with you!

Ingredients:

1/2 cup butter – room temp
1/2 cup brown sugar – packed
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
7 full size Snickers bars cut into pieces

Make it:

First, chop the Snickers bars into small pieces. I first cut them into quarters and then halved them again. This is where you sneak a few pieces to eat for yourself!

Next, cream the butter in your mixer until it’s smooth then add the brown sugar and mix until creamy, about 3 minutes. Scrap the sides of the bowl and mix until it’s light and fluffy.  It’s the start to make these delicious Snicker Cookie Bars!

In a separate bowl, add the baking powder and salt to the flour and set aside.

While the mixer is beating, add in the vanilla and the egg.  Beat on medium until mixed in.

Slowly add the flour mixture and gently mix until blended.

Take the bowl off the mixing stand and add the Snickers pieces in batches. Hand mix.

Line a 9 x 9 glass casserole dish with parchment paper and spray it lightly with cooking oil. The parchment paper makes it easy to remove the finished bars out of the pan. Plus, it makes for easier clean up!

Spread the batter in the baking dish and bake in a preheated 350 degree oven for 30 minutes.

Cool and cut into small squares.

  • 9 x 9 glass pan
